How to cook Kedgeree?

Kedgeree is a dish consisting of cooked, flaked fish, boiled rice, hard-boiled eggs, parsley, butter, curry powder and sometimes sultanas.

It came to Great Britain from India and the original recipe was changed. You can eat kedgeree hot or cold and use some other fish instead of haddock- tuna or salmon for example.Here’s the recipe of Kedgeree:

Ingredients:
– basmati rice
– hot-smoked fish
– 3 eggs
– olive oil
– 1 tablespoon of curry powder
– parsley
– 50g of butter
– 4 onions
– lemon juice

Instructions:
1) Place the rice on to boil. While the rice is boiling, place a new pan of water on to boil and put the eggs there at the same time. Then take the fish and break into small chunks or flakes.
2) Once the rice is done, drain it and set aside. Peel the eggs and chop well and then chop the parsley. Melt the butter in a large pan and add in the onions. Fry it for 2-3 minutes, stirring well.
3) Mix the onions, the fish, the eggs and the chopped parsley in with the rice. Add in the curry powder and the lemon juice and stir very well.
